Nova Lima is a city that grew around Belo Horizonte and today has its own gastronomic life — especially in the Alphaville region, where discerning residents created a demand for quality that restaurants have answered. Est! Est!! Est!!! Alphaville is part of that answer.
The same proposition as the BH location — Italian cuisine taken seriously without losing the pleasure — appears here with the same consistency. The Spaghetti à Carbonara arrived with fresh pasta: that different texture from industrialized dry pasta, more porous, which absorbs the sauce more efficiently. The creamy egg yolk sauce with guanciale and diced pancetta was at the right temperature — hot enough to melt the cheese, cool enough not to overcook the yolk. The classic Roman presentation in white: no sauce decoratively spread around the edges, everything concentrated in the center, honest.
But the Tiramisù was the revelation of the night.
The generous layers of mascarpone and egg yolk cream were settled — this tiramisù was made hours before being served, not assembled on the spot to appear fresh. The champagne biscuit well soaked in coffee and liqueur, firm in structure but moist inside. The cocoa powder on the surface had been sifted with artistry — there was a signature drawn on the plate, that cacao powder like ink on white canvas. A mint leaf as the final note, bright green over the brown of the cocoa.
The tiramisù assembled hours beforehand is superior to one assembled on the spot. Time is the invisible ingredient that firms the layers and integrates the flavors.
Nova Lima no longer needs to ask permission to exist gastronomically. Est! here confirms this.
